Truffles

Truffles, the black diamonds known as rabasses in Provence, are a mystery of the earth.

Rare are the people that know how to find them in the garrigues, the scrub covering the southern French hills. Along with a trained dog, truffle hunters go quietly, hiding from the inquisitive stare, to "steal" this treasure buried at the foot of certain trees. The knowledge of their hiding places is passed down from generation to generation, and nobody divulges the secrets.

Christian Etienne is crazy for this magic specialty, born from his native land, he harmonizes it in his cooking with foods that accentuate its aromas.
